  PREVENTIVE AND HYGIENIC MEASURES INSIDE CURING HAMS CENTRES.


      To avoid the damage that the flies and mosquitoes produce in the hams, the best thing to do is to introduce a series of preventive measures, which will improve the working conditions and environmental conditions, such as:

The most correct location of the electrical exterminators was facilitating the elimination of the flies.

The control of flies in the hams drying places of hams is necessary and advisable.

  •    Hygienic control of ham drying-place and manipulation-place facilities.

  •    It is important to use electrical fly exterminators at an adequate distance between them in order to optimize results.

  •    The most appropriate thing to do is to carry out a study of the rooms dimensions where the devices will be placed, length and widhthways and height to calculate m3, and to determine the distance and the appropriate devices. Place the device at a 3 meters distance from the food product.

  •    When using electric fly killers, insects light traps and pheromone traps, should be cleaned regularly of the accumulation of insects and scraps. People prefer electric fly killers using attraction methods rather than repellent, as they do not kill the flies, but frighten them off.

  •    Use barriers against possible insects entrances in the house, installed on doors and windows (plastic curtains, mosquito nets on windows, sealing joints with silicone, etc.).

  •     Avoid heavy environments by ventilating. Keep the drying-place facilities hermetically closed, with one door only and air conditioning for ventilation, controlling filters regularly.

  •     Do not introduce inside the facilities utensils or materials that have been previously contaminated without previous sterilization.

  •     Waste depositing areas should be situated as far as possible from the entries; the dirty waste containers should be thrown away, as well  as transport containers, support structures, used salt, and so on.

  •     Paint the outside walls of the facilities with insecticide paint, which produces the death of the insects when touching it.

  •     Any rough ground or wall as well as cracks in floors, walls, windows or doors should be replaced by another smooth one which helps cleaning and waste disposal.

  •     It is not advisable installing false or double ceilings, nor high ceilings that complicate their cleaning and serve to accumulate dust and dirt.

  •     The drying-place facilities should be small and independent; hams should not be kept very close to one another, in order to avoid contamination.
